Chocolate Cupcake Day: Our Best Recipe

Chocolate Cupcake Day is amazing, and all it needs to be amazing is the fact that it’s a day dedicated to cupcakes… Chocolate ones. You think that sounds like a pathetic opening? Then you’ll have to forgive us for being distracted by this delicious chocolate cupcake that we have in our hand. When you have something as delectable and undeniably rich and chocolaty as this on hand, you can’t really be expected to pay attention to much. What we can do is provide you with the best recipe for this delectable tasty treat we have in our repertoire, and a bit of a frosting recipe to go along with it.

The Cupcake
¾c cocoa powder, unsweetened
1/8t salt
3T soft butter
1 ½c Granulated Sugar
2 eggs
3/4t extract of vanilla
1c milk

Get your oven preheated to a steamy 350 degrees F (That’s 175C for you metric sorts), and line a cupcake pan with butter and flour, or if you want to get fancy use a tin or paper liner. Then take the flour and sift it all together with the baking powder, the baking soda, salt, and cocoa together, then just set it aside. Cream together the sugar and butter in a large bowl, and then add the eggs, first one, than the other and swirl in the vanilla with a flourish. Then it’s time to bring it all together, first a little flour mix, than a little milk, and beat it all together until it’s all mixed in, then it’s time to finish filling up the cupcake pan! Put those puppies in the oven and bake’em 15-17 minutes at a shot until a toothpick comes out clean!

Chocolate Buttercream Frosting
3c powdered sugar
1/3c butter
2t vanilla
3oz baking chocolate, unsweetened
3 or 4 T of Milk

Frosting is deceptively simple really, and no cupcake is complete without it. It’s pretty much just blended sugar and butter. Here’s what you do, you beat together the powdered sugar and butter with a spoon, and then start blending in the vanilla and chocolate. Once it’s all well mixed, you start dropping in the milk until you get the exact texture you want, and it’s all done! Just take this delicious concoction and smear it over the tops of your pancakes with lavish abundance, and then powder them up with some more powdered sugar.
