History of National Day
A decidedly American dish, biscuits and gravy are believed to have made their debut in the southern parts of Appalacia in the late 19th century.
Regularly eaten for breakfast, this was a hearty meal that was cheap and easy to feed the lumberjacks who were working in the region. Heavy, dense biscuits were split in half and covered in “sawmill gravy”, which is made from sausage along with cornmeal and the drippings from the sausage.
The dish has evolved over the years, to a white creamy “country gravy” that is now usually made from wheat flour and flavorful bits of black pepper, alongside fluffy, buttery biscuits often made with buttermilk.
Growing and spreading throughout the nation with migration, biscuits and gravy continues to be a staple in many households for breakfast and brunch, as well as on many menus in restaurants across the United States.

Try Making Biscuits and Gravy
When trying to make homemade biscuits, it’s best to freeze the butter in advance. And since it might take a bit of practice to get homemade biscuits right, it’s also perfectly acceptable to use refrigerator biscuits that can be found at almost any grocery store.
The fluffier and bigger, the better!
Gravy can be fairly simple to make as well, as it is just a roux made from fat and flour, then thinned with milk.
Some people like to use the drippings that come from their sausage gravy (choose a breakfast sausage with maple flavor for an extra layer of goodness), or some butter is also an option.
Have plenty of milk on hand that can be whisked into the roux for the perfect gravy in celebration of National Biscuits and Gravy Week.
