History of National Lemon Bar Day

National Lemon Bar Day began in 2019. Michael McCarthy, a British environmentalist and journalist, started it after baking lemon bars for a fundraiser.

He noticed many attendees had never tasted this dessert. Surprised by their unfamiliarity, he decided to create a day to celebrate and introduce lemon bars to more people.

The first widely publicized lemon bar recipe appeared in the Chicago Daily Tribune on August 27, 1962. Submitted by Eleanor Mickelson, the recipe featured a shortbread crust topped with lemon curd.

This publication helped popularize the treat across the United States.

Lemon bars combine two classic elements: shortbread and lemon curd. Shortbread originated in 12th-century Scotland, while lemon curd was developed in 19th-century England.

The fusion of these two components resulted in the delightful dessert we enjoy today.
