The popover is an American twist on a Yorkshire pudding. Reportedly popular with settlers in Portland Oregon the treat was known as a Portland popover. Culinary records date the Yorkshire pudding from the 17th Century. The first time that the popover shows up in a cookbook was in 1876. The book was called Practical Cooking by M.N. Henderson.
